Blueberry Turnover Bites

Light, flaky and filled with the best (and easiest) blueberry filling!

A simple, quick and ridiculously easy snack that is so decadent. Each bite is flaky with a little bit of sweet blueberry jam. A perfect pair with your coffee or whip up a large batch for a party! It requires minimum effort and comes together in no time!


Few things before you get started:

  • This is a shortcut as opposed to making your puff pastry from scratch. I use frozen store bought puff pastry but if you have your recipe for puff pastry or rough puff pastry, you can use that as well

  • The filling should be thick and not too runny. It will still have chunks of blueberries with a jam-like base

  • Make sure your filling cools completely before using it as a filling

  • You can experiment with the filling and use other berries, or a mix of berries. Or you could use chocolate or Nutella and the recipe works just as well

  • You can use this berry filling on pancakes, waffles, ice cream but honestly nothing compares to blueberry filling on a hot buttered toast!



Ingredients

Blueberry Filling

  • 1 cup frozen blueberries (you can use fresh as well)

  • 1/4 cup granulated sugar or castor sugar

  • 1 tsp lemon juice

  • 1/2 teaspoon vanilla extract

Pastry

  • Puff pastry sheets divided into 2x2 inch squares. You'll need 16 such squares

  • 1/4 cup milk (or you can use 1 egg)

Method

  1. To a saucepan, add your blueberries and sugar. Cook on medium heat till the berries burst and the sauce reduces and thickens a little. It shouldn't be too runny

  2. Once you've reached the desired consistency, add lemon juice and vanilla extract and set aside to cool the mixture

  3. Pre-heat your oven to 200 C. Line a baking tray with parchment paper and set aside

  4. Using a rolling pin, slightly roll out your puff pastry squares. Add about a tablespoon of blueberry filling in the center. Brush the edges of the puff pastry with milk or egg wash. Fold the diagonally opposite ends and pinch together as shown in the picture and transfer to your baking tray

  5. Brush the turnovers with milk or egg wash

  6. Bake in a pre-heated oven for about 20 minutes or until golden brown and crispy. Sprinkle with some granulated sugar and serve warm!
