Few things before you get started:
I'm using boxed jelly and chose strawberry flavor, feel free to use any flavor to suit your liking
This recipe makes 6 large cups (as shown in the picture) or 12 small ones
Make sure cream cheese is at room temperature and the heavy whipping cream is chilled
I'm using cups that can be set at an angle for the beautiful crisscross patterns. You could also create simple layers of jelly and cheesecake filling
Ingredients
For the Cheesecake Filling:
225 grams cream cheese at room temperature
1/2 cup granulated sugar
2 teaspoons vanilla extract
250 ml heavy whipping cream
For the Strawberry Jelly:
Boxed jelly crystals (according to package instructions, approximately 400 ml of liquid)
For Topping:
Shortbread crumble or crushed graham crackers
A bit of chocolate (because, why not?)
Method
Cheesecake Filling:
In a mixing bowl, combine the cream cheese and granulated sugar until you have a smooth, lump-free mixture. This step ensures that your filling is smooth and velvety.
Add the vanilla extract to the cream cheese mixture and give it a good mix.
In another bowl, whip the heavy cream until it forms soft peaks. This will add that light, airy texture to your cheesecake filling.
Now, the magic happens. Gently fold the whipped cream into the cream cheese mixture, doing it one-third at a time. Use a gentle, upward motion to maintain that delightful fluffiness.
Strawberry Jelly:
For the strawberry jelly, simply follow the instructions on the boxed jelly crystals. You're aiming for about 400 ml of liquid here.
Assemble
Get creative as you tilt your chosen container slightly and pour in the prepared strawberry jelly mixture. Let it set as per the box instructions
Once the jelly is set, use a piping bag to add the luscious cheesecake filling.
Now, for that extra touch of flavor and texture, generously sprinkle shortbread crumble or crushed graham crackers over the cheesecake layer. And if you're feeling extra indulgent (we always are!), a little chocolate never hurts.
